Celiac Patient Workbook & Common Ingredients / Additives Data Table

The National Celiac Association (NCA) has published a data table with permission from a Celiac Specialty Clinic in Isreal that aims to answer common questions that people experiencing Celiac Disease (CeD) may have about frequently used Food Ingredients / Additives in Processed Food.

In August of 2022, this data table was reviewed and updated by the Registered Dietitian Katarina Mollo, MEd, RDN, LDN
As Executive Director of The Dietetic Wellness Project, I have created a Celiac Patient workbook including an adapted version of the data table published on the NCA's official website. I have received permission from the NCA to use their Logo on my Nonprofit Corporation's website.
In this Celiac Patient Workbook, an individual can :
1) Write down a list of Food Ingredients / Additives that they need to avoid
2) Write down general questions they may have about processed foods
3) Write down Food Ingredients / Additives not listed in the data table that they want
to ask a RDN / RD if the Ingredient / Additive contains Gluten
This Patient Workbook is meant to help organize someone's thoughts so that they can have a better life experience living with CeD. CeD is such a complex condition that giving someone the opportunity to write in a small workbook will most likely have a positive effect on an individual's daily life living with CeD. This Patient Workbook is meant to be a small informational resource that will be beneficial for patients who are experiencing severe anxiety around their CeD Dx / Sx. This is not a massive informational packet that could worsen a patient's condition-centered anxiety.
If a patient has been recently hospitalized due to a Gastrointestinal (GI) condition related to their Celiacs Dx the RDN / RD providing medical attention can use this Patient Education Handout for Discharge Planning purposes. This workbook may especially help patients pre-discharge who have anxiety about eating food after experiencing a hospitalization related to their CeD.
